BLT Pasta Salad Recipe

Can you tell that I'm in a pasta salad mood lately? Because it's summer, we are grilling out almost every night. I've been trying to make a variety of sides and this is my latest! This BLT Pasta Salad is super easy to make and it went over VERY well when I brought it to a work party.


Ingredients:

8 ounces rotini or other short pasta (I used wagonwheel pasta cause it's fun!)
1/2 cup mayonaise
1/2 cup sour cream (or greek yogurt)
1 packet or Ranch dressing mix
2 tablespoons of white vinegar
1 1/2 cups of chopped tomatoes
1 cup of cubed swiss cheese
1/4 cup of chopped onion
8 slices of bacon, cooked crisp and crumbled
1 1/2 cups finely shopped romaine lettuce
salt and pepper to taste

Directions:


1. Cook and drain pasta according to package directions. Rinse the pasta with COLD water after draining. 


2. While the pasta boils and cooks, you can cut up your ingredients! Chop red onion, bacon, lettuce tomatoes, and cheese. 








3. In a large bowl, stir together the mayonaise, sour cream or yogurt, Ranch dressing mix and vinegar.


4. Add noodles, lettuce, tomatoes, cheese, onion, and bacon and stir into dressing mixture. Add salt and pepper to taste. Refrigerate for at least an hour prior to serving. If you're making this salad the day before you want to serve it, wait on adding the lettuce and bacon so it stays nice and crispy!
